Ingredients
⅔ cup sugar (125 g)
⅔ cup unsalted butter (150 g)
2 teaspoons vanilla sugar
A pinch of salt
½ lemon (zest)
3 large eggs
1 ⅔ cups all-purpose flour (200 g)
2 teaspoons baking powder
2 tablespoons milk
6–7 small sweet apples
A drizzle of vegetable oil
2 tablespoons apricot jam
1 tablespoon water
Instructions
- Preheat the oven to 350°F (180°C). Line the bottom of a 10-inch (26 cm) springform pan with parchment paper and grease it lightly with vegetable oil.
- In a mixing bowl, beat ⅔ cup of butter (150 g) until creamy. Add the sugar, vanilla sugar, and salt, mixing until combined.
- While the mixer is running, add the eggs one at a time until fully incorporated.
- In another bowl, combine the flour and baking powder, then gradually add to the batter, mixing until smooth. Pour in the milk and mix again until combined.
- Peel the apples, cut them in half, and remove the cores. Make shallow cuts (about ⅛ inch deep) on the cut sides of each apple half.
- Pour the batter into the prepared pan and smooth the top. Arrange the apple halves cut-side up on top of the batter.
- Melt the remaining 2 tablespoons of butter (25 g) and brush it over the apple halves.
- Bake in the preheated oven for about 45 minutes, or until golden and a toothpick inserted in the center comes out clean.
- Mix the apricot jam with the water. While the pie is still warm, generously brush the apples and lightly glaze the batter with the jam.
- Let the pie cool before slicing and serving.
